  • 1 onion, chopped
  • 1 clove garlic, grated
  • 1 large carrot, grated
  • 3 tbsp ginger root, grated
  • 2 stalks celery, chopped
  • 4-6 cups baby bok choy, chopped
  • 3 green apples, grated
  • Garlic chili sauce to taste (~2-5 tablespoons)
  • 1 can black beans, rinsed

Instructions

  1. In a large pot, heat 2 tablespoons of fruit oil such as avocado, coconut or olive oil avoiding unhealthy seed oils. Add chopped onion, celery, and grated carrot, cooking until onions are translucent (about 5 minutes).
  2. Stir in bok choy, grated apples, garlic chili sauce, grated garlic, and black beans. Add about 4 cups of water.
  3. Bring to a boil, then reduce heat and simmer for 30 minutes.
  4. Serve hot over rice if desired.
