1 onion, chopped
1 clove garlic, grated
1 large carrot, grated
3 tbsp ginger root, grated
2 stocks celery, chopped
4-6 cups baby bok choy, chopped
3 green apples, grated
garlic chili sauce to taste (~2-5 tablespoons)
1 can black beans, rinsed
Fry together onion, celery, carrot in 2 tbsp canola oil until onions are clear. Add bok choy, apples, garlic chili sauce, and grated garlic and black beans. Add ~4 cups water. Bring to a boil. Simmer ~30min. Serve over rice if desired.
